RUM BALLS


3 c. vanilla wafers
1 cup pecans
1/2 c. Malibu coconut rum
1 c. confectioners sugar
3 tbsp. unsweetened cocoa
2 tbsp. corn syrup
additional confectioners sugar for rolling

In food processor pulse wafers to crumbs. Add pecans and continue to process until mixture is completely crushed and mixed. Add sugar, cocoa and corn syrup. While the processor is running, drizzle the rum in until mixture comes together. It will be sticky. Roll into 1 inch balls and coat with confectioners sugar. Lay in a single layer and let air dry for 24 hours before storing. Make one day ahead.

Makes 48 balls.
