dried pinto beans (soaked overnight in water)
carrot, cut into bite size pieces ( I used baby carrots)
red, yellow, green peppers chopped small (I used frozen)
1 pkg. taco seasoning, low sodium
salt and pepper, to taste
All quantities are to taste.
Drain water after beans have soaked overnight. Put beans in pot and cover with fresh water. Add onions, carrot, peppers and seasoning. Let come to a boil and stir. Simmer for a couple of hours until beans are tender. Serve over rice.
