1-2lb. bag of red lentils
2 carrots, grated
1 medium onion, finely chopped
4 tbsp. olive oil
1 tbsp. cumin powder
2 tbsp. of flour
salt, to taste
enough water to cover the ingredients then more can be added based on the density of the mixture.
Heat olive oil in pot and saute onions. Add the flour with some water and saute until well mixed with onions. Add the carrots. Add the lentil and mix well. Boil on high heat stirring continuously. When the lentil soften mix with hand mixer to puree. Add hot water if needed and mix. Serve with bread.
This makes a lot of soup so you might want to half the recipe for a smaller crowd.
