The egg overflowed a little, but still very good.

2/3 cup shredded swiss cheese
4 slices turkey bacon (cooked and crumbled)
1/4 cup green onion
1/2 cup frozen spinach ( thawed and squeezed of all excess water )
4 eggs
3 tbsp. of skim milk
pinch of nutmeg
salt and pepper to taste
1 (12 oz.) pkg of buttermilk biscuits

Spray muffin tin with cooking spray and preheat oven to 350 degrees. In a bowl mix together cheese, spinach, bacon and onion. In a seperate bowl whisk together egg, milk and seasonings. Roll out biscuits on a lightly floured surface and press firmly into muffin tins coming all the way up sides. Place a small amount of spinach mixture into each biscuit cup. Pour the egg mixture into each cup. Covering spinach mixture. Bake about 20-25 minutes.
