TEXAS PICKLE


whole jalapenos (from jar)
plain cream cheese (I use fat free)
bacon strips
toothpicks

Cut slit in jalapenos and remove seeds and let juice run out. Stuff with cream cheese. Don't overfill, though. Wrap bacon around making sure to cover as much of the cream cheese as possible to keep from coming out. Place a toothpick through each one to hold bacon in place. Bake in oven at 375 degrees until bacon is cooked and crisped.

Can do this on the BBQ pit, too. Use skewers that have been soaked in water first.
