1 1/2 cups all purpose flour
1 cup whole wheat flour
2 1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. ground cloves
4 large eggs
2 cups buttermilk, shaken well
1 cup canned pumpkin
3/4 stick or 6 tbsp. unsalted butter, melted
cooking spray
Preheat waffle iron. Sift together dry ingredients. In separate bowl mix the wet ingredients. Combine wet and dry ingredients until mixed thoroughly.
Spray waffle iron and spoon batter onto the waffle iron. Cook according to your waffle iron instructions.
I make extra and freeze. Just break in half and put in toaster.
Makes about 6 waffles
Each waffle is about 360 calories
